Beef and broccoli quinoa
Description
The winter can be a challenging time for cooking healthy, I find my self drawn to a lot of cozy calorie rich meals, seasonal vegetables tend to be dense tubers and squashes. So it's nice to have something to break those up while satisfying that cozy warming feeling I crave from a weeknight meal at this time of year. This slightly spicy flavorful dish ticks all the nourishing winner wish list boxes for me while not feeling overly heavy and calorie dense. It's also super affordable and easy to make.

In a medium bowl whisk together marinade ingredients.

Cut steak into thin strips and marinade while you prepare the quinoa and broccoli.

Bring the stock to a boil, add the quinoa, reduce to a simmer and cover, allow to cook for 15 minutes.

While the quinoa is cooking and the steak is marinating, you can prep the broccoli. Cut broccoli into bite size pieces and set aside.

When the quinoa is done cooking, remove from heat and allow to rest. During this time you can start the broccoli. Heat a wok or large pan to medium-high add sesame oil and broccoli, allow to stir fry for 3 minutes.

Add steak and marinade to the pan and stir fry for a further 3-5 minutes.

Heat a small non-stick pan to medium-high and add sesame seeds agitating regularly till toasted, remove from heat and set aside.

Fluff quinoa with fork serve beef broccoli and sauce over top, garnish with toasted sesame seeds and additional Sriracha if desired.
