Description

I often see shrimp on sale in winter but it can be challenging to find interesting ways to eat shrimp in winter. The following is one of my family's favorite ways to enjoy a healthy shrimp dish during the colder months it's also super easy and affordable as always.

  1. Peel and chop squash into small cubes, combine with olive oil in a large mixing bowl and season with salt, pepper, Rosemary and thyme.
     
  1. Heat a large pan or Dutch oven over medium heat, add the squash and cook stirring occasionally for eight minutes.

  1. Add rice and allow rice to slightly toast for a few minutes.

  1. Add vegetable broth, stir and bring to a boil, cover and reduce heat to low. Allow to simmer for 30 minutes.

  1. Meanwhile peel and clean shrimp and grate Parmesan.

  1. Remove the lid and stir in shrimp and Parmesan, allow the mixture to cook for a further 6-8 minutes, stirring occasionally.
     
  1. Remove from heat and allow to cool slightly before serving topped with crispy onions
