BBQ Chicken cornbread pudding
Description
This is the coziest winter recipe, it feels super comforting without that holiday vibe which don't get me wrong I enjoy, but can get a little repetitive sometimes. This recipe is a welcome break that's easy to make and will satisfy a crowd or leave you with leftovers that keep great. I am so truely in love with it and excited to share with you all.

Preheat oven to 375°F if you are baking your own cornbread, prepare according to package directions or your personal recipe.

While the corn bread is baking, thinly slice the onions, in a small pan over medium melt butter and add the onions starting the caramelization. Allow the onions to cook on medium stirring regularly, for about 30 minutes or till they are a deep brown color.

As the onions caramelize you can prepare the chicken and chop the apples. if you're cooking your own chicken breasts or thighs, season it simply with a little oil and salt and pepper and pop it in the oven for 20 minutes or so. If you're using rotisserie chicken now is a good time to pull it. When the chicken is ready, toss in a medium bowl with the BBQ sauce until coated.

Cube the cornbread.

Melt remaining butter and whisk together with eggs, cream, salt and pepper. Add the caramelized onions. Pour the egg mixture over cornbread.

Then add the chicken, apples and cheese and stir the whole thing gently to combine. It will look unappetizing at this point, stay the course it's going to be delicious.

Transfer the mixture to a large casserole dish top with a little extra cheese if you like and bake for 35 minutes till golden brown.

Cut into slices, drizzle with more BBQ sauce and sprinkle with chives to garnish.
