Description

These fresh yet delicate cookies embody the essence of Imbolc and are an easy and affordable way to celebrate the sabbat.

Ingredients

Instructions

  1. Preheat oven to 350°

  1. In a large mixing bowl cream together butter, sugar and cream cheese.

  1. Add egg, lemon juice and zest.

  1. In a smaller mixing bowl whisk together flour , baking power and poppy seeds.
     
  1. Blend dry ingredients into the wet until combined.

  1. In a small bowl mix together additional poppy seeds and lemon zest.

  1. Slightly wet your hands to prevent the cookie dough from sticking to your hands and roll into small balls pressing each ball into the poppy seed and lemon zest mixture. Arrange on a parchment lined cookie sheet.
     
  1. Bake for ten minutes.

  1. Allow to cool slightly before transferring to a cooling rack.
