Winter chicken casserole
Description
This warming dish makes use of those robust winter flavors we all crave when the temperatures drop, packed with protein fiber and flavor. This simple casserole is sure to become a favorite at the dinner table any night of the week.

Instructions

1.Preheat oven to 350°

2.Heat a Dutch oven or skillet over medium , into it cut 1 inch pieces of bacon ( I use poultry shears to do this.) allow the bacon to cook and begin to render about 3 minutes

3. Add onion and cook stirring occasionally to prevent burning for about 10 minutes, add garlic and allow to cook for another minute.

4. While the onions are cooking, cut the sweet potatoes and turnips, add to a large bowl and season with salt, pepper, rosemary and thyme.

5. Add the sweet potato and turnip mixture to the Dutch oven stir everything and allow to cook for 5 minutes

6. While the mixture is cooking cut the chicken into bite size pieces and season with salt and pepper.

7. Mix in chicken and cranberries and Transfer to oven , bake uncovered for 20 mins.
Don't worry the chicken will cook through as the casserole bakes.

8. While the casserole is baking, in a small pot melt butter combine the walnut pieces, maple syrup, and sage .

9. Pour mixture evenly over casserole and return to oven for 5 minutes.

10. Plate , serve and enjoy your delicious winter chicken casserole.
